A wine “cellar,” as a place for storing wine for an indefinite period of time, may be as small as a shoebox or as big as a house; it may be a stand-alone cabinet or a room.

Wine storage systems maintain temperatures between the high 40s and the low 60s. They don’t maintain serving temperatures for whites and sparklings. They cool wine gradually and won’t recover quickly with high usage. Few cabinets are structurally designed to withstand the abuse of high-paced operations.

Dry red wines can be maintained at serving temperature and backup whites are protected. It is recommended that pars be kept in a regular refrigerator, but you can obtain custom refrigeration systems in furniture-style cabinets if needed.
